Vista Restaurante celebrates French cuisine in a solidarity dinner

Creamy yolk of white truffle, parsley root and veal jus, Salmonete das Rochas with burnt cream, artichokes, fennel and roasted fish cream or Chocolate Explosion with toasted almonds and cassis pickles – these are just some of the proposals of the Head João Oliveira, for the solidarity dinner that, on the 21st of March, will take place at Vista Restaurante, at the Bela Vista Hotel & SPA, in Praia da Rocha.

Vista Restaurante participates in the 2nd edition of the “Goût de France/Good France”, a solidarity project that brings together 1500 chefs from all over the world to promote French cuisine, recognized as a UNESCO World Heritage Site, in a typical dinner… “French style”.

In this worldwide event, participating restaurants are invited to serve their own interpretation of French cuisine, in a harmony between cultural influences and respect for the recognized “art” of Gallic cuisine, the capacity for innovation and the values ​​it conveys: sharing, respect for “eating well”, for their contemporaries and for the world.

For the first time, Vista joins a cast of 35 Portuguese restaurants that will participate in this project, proposing an experience exclusive gastronomy by the hands of your chef, João Oliveira.

To start the tasting, the Executive from Vista will feature a “Amused” of Octopus in algae and lime tempura keffir with avocado and oysters, followed by a creamy yolk of white truffle, parsley root and veal jus.
For starters, a blue lobster with sea herbs, cauliflower, imperial caviar and sauce will be presented. champagne.

João Oliveira_2In the main course, the Executive João Oliveira will present a combination of Salmonete das Rochas with burnt cream, artichokes, fennel and roasted fish cream.

One of the common passions of French and Portuguese cuisine is cheese. For this reason, Chef João Oliveira will present as fade out the typical main course Queijo da Serra buttered with roasted tomato pate with spices, as well as a fusion of Cendré cheese with orange jam and algarvian citrus fruit.

The pre-dessert will be refreshed, as it should be, with the typical Algarve oranges and for dessert a Chocolate Explosion with toasted almonds and cassis pickles will be served.
