Today is the day to party in the city of Olhão, free and of various types. After yesterday the weather didn't help, the businessman from Olhão, Filipe Martins, the Câmara de Olhão and ACRAL postponed to this Sunday at noon the distribution of 70 meters of bread to residents and visitors, in Largo da Restauração, next to the Church Headquarters of Olhão.

To liven up the mouths of those who visit there, there will be four different types of pastries, specialties from chef Filipe Martins' Kubidoce pastry that have even gained fame abroad. The traditional Olhão folar, rolled and with lots of sugar in the mix, the honey and olive oil, the Serra folar and the chocolate folar are the varieties to choose from.

Delicacies that caught the attention of the editor of the magazine of the famous and mediatic British chef Jamie Oliver, who was in the Algarve and got to know the work of Filipe Martins. «They were here, were impressed and immediately took pictures and spoke to me», Filipe Martins told Sul Informação. On the occasion, he showed the Jamie magazine team “six different types of bellows”.

The young pastry chef from Olhão did not manage to distribute the pastries yesterday, as expected, despite having everything prepared. And everything in this case means saying a lot, since we are talking about 300 kilos of cake. “We are talking about a lot of work. Just to bake it takes 24 hours. We have special ways to make the folar and each module only takes an hour to bake», he revealed.

«To make the cakes we need about 300 eggs, 150 kilos of sugar, flour, 10 to 12 liters of oil. Then take medronho brandy, cinnamon, fennel, honey, lard and butter», said the pastry chef.

The day woke up very sunny in Olhão and everything indicates that the weather will help and allow the distribution to take place in Largo da Restauração. But, if the weather gets worse and it rains, “we already have a solution”. “We are going to offer it to solidarity institutions. I have already asked the president of the Board to give me a list of the IPSS to take there», revealed Filipe Martins.

Filipe Martins opened the first Kubidoce pastry shop in Olhão just over a year ago and is getting ready to open the third unit in the coming weeks. The original pastry shop, next to the Igreja Matriz, «is going to get a little bigger and I want to start working with live chocolate», revealed the chef.

Chocolate is, by the way, the great passion of the businessman from Olho, who won the Chocolate Festival in Óbidos in 2010.

«I want to differentiate myself more and more for chocolate, I really want to make a chocolate shop. I want to have a lot of variety in chocolate. I already have enough today, but I want more, I have the capacity for it», revealed Filipe Martins.
