Chef André Simões creates “Prego Mar e Terra” which pays homage to Portugal and sets the tone for victory at Euro2020

Personal recreation of “Surf&Turf” can be sampled in the newly created “European 2020 Corner” at the Hilton de Vilamoura

André Simões, Executive Chef at Hilton Vilamoura, designed a special delicacy for Euro 2020, the “Prego Mar & Terra Hilton”, in which he pays homage to the Portuguese people.

It is a very personal recreation of the well known «surf&turf». With grilled veal and shrimp, this nail leads you on a gastronomic journey over the Land and Sea of ​​our Portugal, complete with fried local onion, sautéed mushrooms, egg frittata, scented with almond sauce and coriander. It is served with crispy fried sweet potatoes. To accompany a mug of national beer.

This delicacy can be consumed at the Ruby Bar Terrace, at the Hilton Vilamoura, in the newly created “European 2020 Corner”, with several strategically placed televisions, so that everyone can watch the Euro 2020 matches, open also to passing customers, who are not housed in the resort.

André Simões is the Executive Chef at Hilton Vilamoura, responsible for four restaurants, three bars, room service and banquets.

He was born in Montreal, Canada, and came to Portugal at the age of nine. Here he began to have his first contact with the Portuguese culture that his family spoke so much about in Canada.

He soon began to develop a great passion for cooking, through the dishes he created for his family. Passionate about local products and inspired by traditions, he creates original dishes of “honest food concept".
