It is called “Filó da Praça” and has “two stars”: almond and orange. the new candy from Faro, presented this Tuesday, February 8, uses products that are found every day on the stands of the Municipal Market and wants to be an ambassador for the city.

Filipa Carmo is the author of the recipe.

the ambifaro, the municipal company that manages the Market, launched the idea and this one from Faro, trained at the School of Hospitality and Tourism of the Algarve, did not let it escape.

One of the premises of this sweet, which served to mark today the 15th anniversary of the “new” Market, after the remodeling works, is to use products that can be found for sale every day in that space.

«Two of these products, whatever the season, are almonds and oranges and, therefore, they had to be the stars of Filó da Praça», Filipa Carmo says, smiling.

“I only use plant-based products and, for me, it made perfect sense to use only these ingredients,” he adds.

The phyllo dough is added to almonds and oranges and, thus, the new sweet, without added sugars, was born, which will start to be sold tomorrow, the 9th, at the Mercado de Faro.

The confection, explains Filipa, is «as simple as possible» because the recipe was given to the bakeries in the market so that they can also make filos.

«I tried to simplify as much as possible: it doesn't take great techniques… just that the product is good», he says.

Henrique Gomes, chairman of the Board of Directors of Ambifaro, explains that the idea is to involve all spaces in the Market that have «food and drinks and conditions for conservation».

Filipa Carmo is also providing training to market operators and tomorrow, the 9th, «there will be filos» for sale.

The price has not yet been revealed, but it will be «in line with normal pastries, such as custard tarts and muffins».

One of the goals of this new sweet is to «attract people to the Faro", whether from the municipality or "outside".

«It is a sales argument for the city itself and for tourism itself», concludes Henrique Gomes.
