80 experts present advances in solar cooking at UAlg

Consolfood reveals the potential of solar ovens

80 experts from around the world will present the advances in solar cooking at the international conference “Advances in Solar Thermal Food Processing” (Consolfood 2020), which will take place between tomorrow and Friday, the 22nd and 24th, at the Instituto Superior de Engenharia (ISE), at the Penha Campus of the University of Algarve, in Faro.

The main speakers at this third edition of the event will be Manoj Soni, professor at the Birla Institute of Technology and Science, in Pilani, Rajasthan (India), and Jürgen Kleinwächter, physicist and inventor.

“For three days, participants will present and discuss topics related to advances in solar cooking, including food processing in terms of cooking and dehydrating food. In addition to the lectures, there will be an exhibition space for solar ovens by authors from Portugal, Spain, India, Lesotho, Mexico, Brazil and the United States, France, among others», according to the University of Algarve.

Celestino Ruivo, professor at the Instituto Superior de Engenharia of UAlg and the great promoter of solar cooking in the Algarve, is responsible for promoting this conference.

In view of the exponential increase in energy consumption and local and global environmental problems, Celestino Ruivo defends that «the exploration activity in the manufacturing units and the daily life of each human being must be guided by practices of good efficiency in the use of natural resources, including energy drinks'.

In his opinion, «such practices will certainly contribute to the maintenance of balanced conditions in nature and, consequently, to a healthier life».

The UAlg teacher has, moreover, dedicated a lot of time to demonstrate the potential of the solar kitchen and «that it is possible to use it in various contexts: in each family's home, in restaurants, in school canteens, in factories, in homes of the elderly, and in different institutions».

"Solar cuisine, known for many decades, but used by a limited number of people, is an important pillar, especially in regions with a high potential for solar radiation, such as the south of the Iberian Peninsula," concluded UAlg.

During this third meeting, participants will have the opportunity to prepare lunches and coffee breaks using thermal solar energy.
