Forgotten Food took diners to Senhor Álvaro's vegetable garden to harvest and cook

Forgotten or Unforgettable Food?

On Sunday morning, armed with baskets and baskets, and reinforced by donuts with olive oil, the participants of Spoon and Cook went to Mr. Álvaro Coelho's vegetable garden, near the Tôr, not knowing what they were going to harvest, cook, let alone eat …but with a lot of confidence.

D. Lurdes' donuts (or charingos) had already welcomed the participants of Spoon and Cook: fried in olive oil, with a touch of lemon and sprinkled with sugar and cinnamon, provided the right energy for the harvest in the master's garden Alvaro.

There, we picked peppers, acorns, oranges, melons and pomegranates. Sunday was sunny, which motivated many conversations, because without rain, there are no gardens.

in the kitchen of Thursday of the Tor, the culinary talent of Jesus Days it was already in possession of the sprouts from the garden and being used in a traditional stew of cabbage and beans with sweet potatoes, accompanied by pork.

Fans of forgotten food have turned to roasted peppers, acorns cooked with fennel, carrot salad, olive seasoning and orange juice. They finished with almond and bread pudding, pumpkin and coconut pudding and apple cake.

In between, and already with the presence of the Secretary of State for Cultural Heritage, who stopped by to learn about this initiative as part of the 365Algarve's programming, D. Lurdes presented everyone with blocks dedicated to the Forgotten Food Festival:

The cornmeal porridge
